You can keep the log of cancelled Activities. From Activity Type, you can configure that for which type(s) of activity, you want to keep the log of cancelled.
Open Activity Types for manage cancellation history
User need to cancel activity feature Goto --> Sales --> Configuration --> Activity Types. One form will be displayed like below.
